PanCAKEs FTW


​Y'all. Listen to this. Many many moons ago, I tried pancakes at a restaurant somewhere in central Texas that were SO good. Obviously so good that I still think about them to this day. I wanted to kiss the chef for blessing us with such a delight. On the cheeck, on the cheek. I told the owner how great I thought they were and she straight up told me her secret ingredient...cake mix. It made sense. Cake = wonderful. Pancakes = marvelous. Put the two together and you have WONDERLOUS. Or Marveful. Not real words, I know. The point is I had to try it for myself. After all, Cake is literally part of the word "pancake". Fluffy sweet goodness. Match made in Heaven?! (you can use your favorite cake flavor i.e. red velvet, chocolate, lemon) IDK just pick one! I used yellow (:

Tips:

-Instead of syrup, melt some cream cheese icing and drizzle on top for a REAL cake feel

- 2 was about all each of us could handle so serve accordingly :)

Makes 10-12 pancakes - Freeze leftovers in a ziploc bag and reheat in microwave when ready to eat!

 

What you need:

  • 1 & 1/3 cup yellow cake mix

  • 1 cup all-purpose flour

  • ½ TBSP baking powder

  • ½ tsp salt

  • 1 & 1/3 cup milk

  • 2 egg

  • 1 tsp vanilla

  • Pam oil spray

  • Syrup or honey or icing

How to:

  1. Heat griddle or skillet on medium-low heat. (It's ready when you can drop a water droplet on the griddle and it sizzles away)

  2. Sift flour, baking powder and salt 3 times into a large bowl. Pour in cake mix, milk, eggs, and vanilla. Combine until smooth.

  3. Pour about ¼ cup of batter onto hot griddle or skillet. Once bubbles start to form. Check the bottom, if golden, flip. Check after about 1 minute. If that side isn't golden brown, keep cooking and checking.

  4. Lather with your favorite toppings (i.e. powdered sugar, syrup, honey, fruit, icing, etc.) and bon appetit.
